Creative Cuisines 261 is a lab-based course where students develop advanced food preparation skills in culinary arts while also exploring USA regional cuisine and gaining global perspectives of international cuisine.  As students prepare the cuisines of these regions, they will explore the food customs, local history and geography of each.  Advanced culinary techniques, knife skills, meat preparation and high heat cooking are emphasized throughout this course. Pending Board approval.
